Tyler Fitzgerald is a good option, but I don't think the Twins would go that route. Julien and Austin Martin would be the best bets.

Keep Lee up - just keep him at the bottom of the order and preferably use him at 3B. At some point, it has to be sink or swim for young players. Sending him to AAA at this point...not sure what it accomplishes.
