I prefer to put a little spice into these, so I add a pinch of cayenne or some of the peri peri I picked up in Portugal. If you don't have cotija, you can stir some adobo into crema and use it as a sauce. (Also works well on fish tacos.)

 

Also, chop up a lot more cilantro than the recipe calls for because cilantro is the leaf of the gods. Mix that with a bunch of onions, then top the tacos with possibly too much of the combo.

 

And always remember, folks, wheat tortillas are an abomination.
