Now that sounds like something worth trying...  smoked mac and cheese.  Might not agree on seafood, but I'd have to try that.

 

Of course my kids hate smoked meat.  Does that mean I need new kids?

 

Yes. Smoked meats are amazing.... Throw that sucker in a big green egg, and 10-12 hours later I'm in heaven.

Smoked a whole chicken yesterday. Two hours at 225, high smoke, and an hour at 375. The bacon I wrapped on the chicken was perfect, as was the chicken.

Unfortunately, Traeger has had its day. RecTec is where it's at right now. Unless you want to go pro, but those cost more than I paid for my truck. :D

There are, imo, better tasting Mac and Cheese boxes. But I highly recommend roasting cauliflower, and melting cheeses over it, much better tasting overall.

 

What the heck is Miller Clear? Is that some kind of steroid?

Yes, it comes with Miller Cream.

That just went on my list to try.  Do you use any kind of rub with it?

I put mine in a pellet grill and smoke the mac and cheese for a couple of hours. 

Coincidentally, that's the treatment opposing offenses give the Twins pitching staff.

I user a Camp Chef, Sante Series Turkey Cannon Infusion roaster (Amazon) It's too tall if you leave the rack in the grill, so, I take the rack out and put the pan with the rack on the heat distribution plate.

 

I put some water, diced onions and garlic inside the Cannon, a little Soy and cracked pepper on the skin of the chicken and wrap with bacon. Not fully wrap, just 4 or 5 strips of bacon. No need to use tooth picks because the temp will form the bacon to the chicken. Try not to overlap the bacon. (Mistake I made this last time. The exposed bacon cooks beautifully and is very tasty.)

Came to the thread for De Leon hot-takes, left with some recipes for macaroni hot-dishes. 

What recipes? Was more ... make the stuff in the box, it's the best.
