I've done 10 pounds a couple times, but my philosophy is that if something's worth doing, it's worth overdoing. Mrs. IT will be glad to have the fridge back after seven days of curing. I borrowed a deli meat slicer from a friend -- cutting is the most time-intensive part. 

But the bacon burgers tonight were worth it.

My S-I-L and a friend do homemade bacon every so often. It's outstanding. But don't tell him I said so.
