Okay ... it's not chocolate mousse, but since I didn't have any pumpkin pie this past weekend, I'm making these mini pies. So I can eat one or two over the next day or two ... then freeze the rest. :)

 

Ahhh ... the tricks of cooking for one.

mini pies sound better than normal pies! Are we talking 2 pumpkin pies, or mix and match?

We are talking 12 mini pumpkin pies made in a muffin tin. Can freeze and then thaw one when I want a piece of pie

I love that picture, by strange coincidence the grocery store I was at today was auctioning off a large framed print of it. I think I should go make a bid, someone is trying to tell me something.

So, we did a good job yesterday of foreshadowing today's National Days.

Today is National Day of Giving. As we all learned yesterday, Always isn't a fan. Hopefully we can all change her mind on generosity this holiday season. 

 

Today is also National Pie Day. There is another National Pie Day on January 23rd, so this holiday is an impostor. Either way, might as well enjoy the 10 other mini pies you made yesterday Chitown!

 

Today is also National Eat a Red Apple Day. I can get on board with that. Honeycrisp is #1 with a bullet. 

 

You also have the choice of celebrating Rosa Parks Day today. Some states celebrate it on the day she was arrested (today) or on her birthday February 4. So let your freak flag fly however you choose.

No, it's National Fried Pie Day and National French Fried Clams Day. On top of that, December begins National Egg Nog Month (yum!) and National Fruit Cake Month (I think we have enough of those here ;) )

Fried pie. Think McDonald's apple or cherry pies when they first came out, unlike the 'healthier' baked version they have now ... which I've never tried.

National pie day is March 14.....this is silliness. Come on, this needs to change, right?

 

I think we are going for ramen today before seeing the Arcs at First Ave.....not sure the place has pie.

National French Fried Clams Day!!! I love clams! The clam po boy is the underrated cheaper cousin to the more renowned oyster po boy, but no less tasty.

 

It's time like this I hate living in a land locked, frozen prairie burg! Curses!!

Alas, no clams (or oysters) for this one. I have an intolerance for them, not by choice. Got bad oysters once, and now all mollusks are banned from my diet as my body now recognizes them as 'poison' and responds accordingly. It's just not fair! Sad face! :(

Do they now manufacture muffin tins with 11 cups? Are we estimating on the assumption that ChiTown had a second pie today (or will have by the time we make arrangements to raid her kitchen)? Or are you leaving a piece for me?

 

Furthermore, as you seem to prefer my more sardonic stance on the issue of giving, I'm fine with giving as long as it isn't me.

 

Especially if it's you. Maybe you can give me nine pies...that works for my family. Too late to throw in a few more for the dogs, especially since ChiTown's tins are the amateur kind that only hold 12.

I'll have to do my giving today. I usually check my finances toward the end of the year and and then give accordingly before the New Year. And to make it clear I'm not giving to receive, yes, I do consider the tax deduction in my timing, but mostly it's to maximize what I can financially afford.
