I cut up a chicken and marinated it in Sambal, Siracha, lime juice, rice wine vinegar, agave syrup, honey, toasted cumin, chipotle powder, garlic, paprika, salt and pepper. I'm going to grill it with a little smoke, and serve it over vegetable brown rice, and chimichiri sauce.

It's usually called rooster sauce in commercial kitchens. A good squirt of siracha with mayo and a little sour cream is a great dipping sauce. On a side note. both these sauces will cost you 3 or 4 bucks at Lunds. A buck fifty at an Asian market.
