They obviously update season total advanced defense stats daily, but don't have defensive stat game logs.

More accurately, it would probably have to be a play log, but I agree that such a thing would be interesting!

I was trying (and failing) to lookup the catch probability of the play on Monday night when Buxton laid out for that ball, that he didn't catch. I think it was Gomez's double in the 3rd or Napoli's double in the 2nd.

That's Hit Probability, and it's based solely on launch angle and exit velocity: http://m.mlb.com/glossary/statcast/hit-probability Catch Probability would involve distance and hangtime, so it takes into account the location/direction of the ball and the fielder: http://m.mlb.com/glossary/statcast/catch-probability
