He attended Alderson Broaddus University and went undrafted out of college. He continued pitching for the Utica Unicorns and the Minnesota Twins signed him to a minor league contract without ever meeting Dobnak. He pitched well for the Twins, rising through the ranks until he made his major league debut on August 9, 2019 against the Cleveland Guardians, going four innings and allowing no earned runs. Dobnak was a critical part of the Twins' success down the stretch in 2019, pitching to a 1.59 ERA as the Twins rotation suffered multiple injuries and the suspension of Michael Pineda due to a positive PED test result.
